Methodology

One purple onion, halved (one in each jar).

• ¹⁄₄ cup vinegar
• 1tbsp salt
• Half an onion, sliced
• Rest is water

Outcome

These really weren’t intended to last an entire year, but my god they did. The color drains out of them fully within a few months, and the flavor dulls into just sour oniony, but they’re completely clean and work fine in soups, salads, or sandwiches.
