Dried Tomatoes 1

2022-06-10

Timeline

Methodology

3 Campari tomatoes, sliced thinly, air fryer, 135F for 8hrs. Jarred in ~4oz glass jar.

Background

Following the successes of da2 ([[2022-06-05_Dried Anaheims 2]]), ds1 ([[2022-06-08_Dried Serranos 1]]) and db1 ([[2022-06-09_Dried Bananas 1]]), dehydration seems pretty straightforward. But I wanted to branch out further, what if we took something with an absurd water content and dried it? Does it need dramatically more time, or heat?

Outcome

Worked well, but could use two tweaks. First, a longer time. 8hr is barely enough, and they could stand to go for 9. Second, more tomatoes could fit. I did a bit of layering, but they shrink substantially as the water leaves - meaning that you end up with a small fraction of the original volume (much smaller than for other vegetables or even fruits). The package we bought had 6 tomatoes, which all could have probably fit in one run, with a ~10hr timer.
